Update cargo-espflash and espflash

Description

Major 3.0.0 release breaks building process, we should update espflash and encourage user to do it too (like for the 2.0.0 release)

Also should update micro-rdk-installer

Docs changes clarification

Viam Docs currently show `cargo install cargo-espflash v2.0.0-rc.1`. Should be changed to `cargo install cargo-espflash`, which will install v3.0.0 or later https://docs.viam.com/get-started/installation/prepare/microcontrollers/development-setup/#install-the-rust-esp-toolchain-and-activate-the-esp-rs-virtual-environment
